“There’s only one thing that smells like this,” said Graham Snyder as steam billowed out of the evaporator, shrouding the longtime syrup producer in a maple mist.

“When you walk in, it hits you right away,” he noted of the faintly sweet scent, as the bubbling sap slowly but surely turned into this season’s first batch of pancake topping.

It’s the same ritual every year at Snyder Acres farm near Breslau, yet along with the steaming sap, there was also excitement in the air.
